Avocado Dressing

Ingredients

  • 1/2 large ripe avocado
  • 1 tablespoon lime juice
  • 1/8 teaspoon salt
  • 1/8 teaspoon chili powder
  • 1 clove of garlic, minced
  • 1/4 cup buttermilk

Instructions

Put all ingredients in a blender or food processor and blend until smooth.

Ingredients

  • 1 large ripe avocado
  • 2 tablespoons lemon juice
  • 1/8 teaspoon salt

Instructions

Mix with a fork or potato masher in a bowl until desired consistency.

Ingredients

  • 2 fresh tomatoes, seeded and diced
  • 1/2 red onion, chopped
  • 1 – 2 jalapeno peppers, seeded and minced
  • 1/2 cup fresh cilantro, chopped
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lime juice
  • 2 avocados
  • sea salt to taste

Instructions

Combine first 6 ingredients in a medium bowl. Season to taste with salt. Add avocado to salsa just before serving. Can be covered and refrigerated for up to 2 days.

Ingredients

  • 2 ripe (medium – large) avocados, mashed
  • juice of 1 lemon
  • 2 -3 cloves of garlic, crushed
  • 1/4 – 1/2 cup minced green or red bell pepper
  • 1 small, finely minced red onion
  • 1 small, chopped cucumber
  • 1 chopped, hard-cooked egg
  • 1 medium diced tomato
  • 1/2 cup olives
  • 1/2 teaspoon salt (more, to taste)
  • chili powder and black pepper to taste

Instructions

Mix together in a  bowl with a fork until desired consistency.
